What Steak (R)evolution Is About
Franck Ribière’s family raises cattle in central France, where it was taken for granted that the best red meat in the world was French, until a trip to New York knocked the certainty out of him. He and his butcher, Yves-Marie Le Bourdonnec, travel to Italy, Spain, Sweden, Japan, Argentina and Brazil, talking to breeders, butchers, cooks and historians. The question looks simple, namely why we find one cut of meat good and another not, and the answer spreads out across breed, pasture, ageing and patience. The film is honest enough to notice what its own good news costs: away from industrial farming, a decent steak has quietly become a luxury item.
